Instructions

  1. Combine soaked beans, onion, celery, bell pepper, garlic, ham hock, chicken stock, and bay leaf in a large slow cooker.

  2. Cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the beans are tender.

  3. Discard the bay leaf and ham hock.

  4. Prepare white rice as needed before serving.
