Slow Cooker Honey Mustard Pork Tenderloin

Prepare pork by trimming, patting dry, and seasoning lightly with salt and pepper.

Place the seasoned pork tenderloins into the slow cooker.

Combine garlic, mustard, honey, brown sugar, vinegar, and thyme in a small bowl, then pour this mixture over the pork, turning to coat thoroughly.

Cover and cook on low for 5 to 7 hours, or on high for 2.5 to 3.5 hours.

Remove the pork to a plate, cover with foil, and keep warm.

Pour the cooking liquids into a saucepan; bring to a boil, then reduce heat and simmer for 3 to 5 minutes until reduced by about one-third.

Whisk cornstarch with cold water until smooth, then stir this mixture into the reduced liquids and cook for 1 minute until thickened.

Slice the pork and serve with the thickened sauce.
