Place chopped onions and celery in a 4-5 quart slow cooker.

Combine ground beef with 1 teaspoon salt and pepper in a large bowl, mixing thoroughly.

Form the mixture into eight equal patties.

Arrange patties over the onions and celery in the slow cooker, avoiding direct stacking.

Whisk together tomato juice, ketchup, minced garlic, Italian seasoning, and the remaining 1/2 teaspoon salt in a separate bowl.

Pour the sauce over the patties, then cover and cook on low for 7 to 9 hours.
