Slow Cooker French Onion Meatballs

Instructions

  1. In a large slow cooker, combine sliced onions, minced garlic, a bay leaf, butter, balsamic vinegar, Worcestershire sauce, salt, and pepper. Cover and cook on high for 3 hours, stirring once after 1 hour.

  2. Preheat oven to 425 F and line a baking sheet with foil. In a bowl, combine ground beef, panko breadcrumbs, dry onion soup mix, an egg, and herbes de Provence (or dried thyme).

  3. Form the mixture into 24-28 1-ounce meatballs and place them on the prepared baking sheet. Bake for 10 minutes.

  4. Add the baked meatballs, condensed French onion soup, beef broth (or water), and additional herbes de Provence (or dried thyme) to the slow cooker with the onions. Cover and cook on high for 2 more hours.

  5. Adjust seasonings to taste. Before serving, sprinkle with shredded Gruyère cheese, cover, and let stand 5-10 minutes until the cheese is melted. Garnish with fresh thyme or parsley if desired, and serve with toasted baguette slices.
