Slow Cooker Feijoada (Brazilian Black Bean Stew) Recipe

Instructions

  1. Chop onion and tomato; mince garlic.

  2. In a skillet, cook bacon until crisp, then drain.

  3. Brown chorizo in the same skillet. Slice, then return to pan and brown again; drain.

  4. Brown ribs in the skillet; set aside.

  5. In the same skillet, cook onion and garlic until translucent, then add tomato.

  6. Transfer cooked onion, garlic, tomato, sliced chorizo, chopped bacon, and ribs to a slow cooker. Add beans, 1.5 cups beef broth, ham hock, and cumin.

  7. Cook on low for 6-8 hours until rib meat is tender. Season with salt, pepper, and optional lime juice. Serve with rice and orange.
