Slow Cooker Chicken Gumbo

Instructions

  1. Combine flour and oil in a 2-quart saucepan until smooth.

  2. Cook over medium-high heat for 4 minutes, stirring continuously.

  3. Reduce heat to medium; continue stirring and cooking for about 15 minutes until the roux is dark reddish-brown.

  4. Allow the roux to cool.

  5. Add chicken broth to a 3 1/2 to 6-quart slow cooker and stir in the cooled roux.

  6. Stir in the sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper.

  7. Cover and cook on low for 7 to 9 hours, or on high for 4 to 5 hours.

  8. Skim off any fat before serving.
