Slow Cooker Chicken and Gravy

Instructions

  1. Peel and cube potatoes into 1- to 2-inch pieces, slice celery into 1-inch pieces, then place them with baby carrots in the slow cooker.

  2. Pat the chicken breasts dry.

  3. Heat vegetable oil in a skillet over medium heat and brown the chicken breasts for 2 to 3 minutes per side.

  4. Layer the browned chicken over the vegetables in the slow cooker.

  5. Cover the chicken with undiluted cream of chicken soup and sprinkle with dry onion soup mix.

  6. Cover and cook on low for 5 to 6 hours until the chicken is cooked through and vegetables are tender.

  7. Transfer the chicken and vegetables to a serving dish, garnishing with fresh chopped parsley if desired.
