Slow Cooker Brisket With Caramelized Onions

Instructions

  1. Season brisket with salt and pepper.

  2. Brown brisket on both sides in a hot, oiled skillet, then transfer it to a slow cooker.

  3. Sauté sliced onions and garlic in the same skillet until caramelized, about 20 minutes.

  4. In a bowl, combine tomato purée, stock, vinegar, sugar, thyme, Worcestershire sauce, salt, and pepper; add this mixture to the skillet with the caramelized onions.

  5. Pour the onion and sauce mixture over the brisket in the slow cooker, cover, and cook on high for 5 to 5-1/2 hours.

  6. Remove the brisket, thinly slice it against the grain, and serve with the accumulated sauce.
