Slow Cooker Beef and Black Bean Stew

Heat oil in a large skillet over medium heat, then brown ground beef with garlic and onion until no longer pink. Drain fat and transfer to a slow cooker.

Add tomatoes, salsa, cumin, salt, pepper, corn, and black beans to the slow cooker.

Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Before serving, reserve some green onions for garnish; stir in the rest of the green onions and cilantro during the last 30 minutes.

Serve garnished with green onion, and with cheese, guacamole, sour cream, tortilla chips, or cornbread.
