Slow Cooker Beef and Black Bean Stew

Instructions

  1. Heat oil in a large skillet over medium heat, then brown ground beef with garlic and onion until no longer pink. Drain fat and transfer to a slow cooker.

  2. Add tomatoes, salsa, cumin, salt, pepper, corn, and black beans to the slow cooker.

  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

  4. Before serving, reserve some green onions for garnish; stir in the rest of the green onions and cilantro during the last 30 minutes.

  5. Serve garnished with green onion, and with cheese, guacamole, sour cream, tortilla chips, or cornbread.
