Slow Cooker Beef and Bean Stew

Instructions

  1. Cut beef into 1/2-inch pieces and coat with flour.

  2. Brown the floured beef in olive oil in a skillet over medium-high heat.

  3. Chop onion, slice celery and carrots, and chop bell peppers.

  4. Drain and rinse beans.

  5. Combine chopped vegetables, seasonings, drained beans, broth, tomatoes, and browned beef in a 4-6 quart slow cooker.

  6. Cover and cook on high for 4-5 hours, or on low for 8-10 hours.

  7. Optionally, add corn kernels 1 hour before serving.
