Slow-Cooker Baby Lima Beans and Ham

Instructions

  1. Soak lima beans in 2 quarts of water overnight.

  2. Drain the beans, then combine them in a slow cooker with chopped onions, a ham bone, and 3 to 4 cups of fresh water, just enough to cover.

  3. Cook on high for 2 to 3 hours, until the lima beans are tender.

  4. Stir in any extra diced ham, Cajun or Creole seasoning, black pepper, and cayenne pepper, then season with salt to taste.

  5. Continue cooking on low for 2 to 4 hours, until the beans are very tender, then keep warm until ready to serve.
