Instructions

  1. Trim fat from the roast and season thoroughly with salt and pepper.

  2. Heat 1 tablespoon olive oil in a large skillet; brown the roast on all sides for approximately 2 minutes per side.

  3. Transfer the browned roast to a slow cooker.

  4. Add all remaining ingredients, cover, and cook on low for 10 to 12 hours.

  5. If the liquid appears insufficient, add 1/3 cup of water.

  6. Check for doneness: the meat should easily shred with two forks. If it remains tough, cook for an additional 2 hours.
