Slow-Cooked Root Vegetables

Instructions

  1. Combine cubed potatoes, chopped onion, minced garlic, baby carrots (or chunked large carrots), water, olive oil, salt, and pepper in a 3- to 4-quart slow cooker.

  2. Stir to coat all vegetables thoroughly.

  3. Cover and cook on low for 7 to 9 hours, or until the vegetables are tender.

  4. Serve immediately.
