Instructions

  1. Start boiling a large pot of salted water.

  2. Cook bacon cubes in a skillet until browned; if using, add onion and cook until transparent, then set aside.

  3. Purée chopped potatoes in a food processor.

  4. Gradually add salt and flour to the puréed potatoes, processing until the batter is thick enough for a spoon to stand upright.

  5. Scrape small pieces of batter, about one-third at a time, into the boiling water.

  6. Once dumplings float to the top, remove them with a slotted spoon, drain, and repeat with the remaining batter.

  7. Combine all cooked dumplings with the prepared bacon mixture in the large skillet and serve, garnished with chives if desired.
