Skorthalia (Skordalia): Greek Garlic Dip and Sauce

Instructions

  1. Start boiling salted water in a large pot, then add peeled potatoes and cook until tender.

  2. Drain the cooked potatoes, return to the pot, season with pepper, and mash.

  3. In a food processor, combine the mashed potatoes and garlic, pureeing for 30 to 45 seconds until well mixed.

  4. While pureeing, slowly add olive oil and vinegar, alternating until the mixture is smooth and thick; add up to 1/4 cup cold water if needed for consistency.
