Skillet Zucchini and Tomatoes

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Cook onion until tender, then add garlic and cook for 2 minutes.

  3. Stir in sliced zucchini, broth or tomato juice, sugar, bay leaf, salt, and pepper; cover and simmer for 10 minutes, stirring occasionally.

  4. Once zucchini is tender, add tomato wedges; cover and cook for an additional 2 to 3 minutes until hot.

  5. Remove the bay leaf and transfer the vegetables to a serving bowl.
