Instructions

  1. Fry bacon in a large skillet until crisp; remove, crumble, and set aside.

  2. Drain all but 1 tablespoon of bacon drippings from the skillet.

  3. Slice the zucchini into 1/2-inch pieces and slice or chop the onion.

  4. Sauté the sliced zucchini and onion in the skillet drippings over medium heat, seasoning with salt and pepper, until tender and lightly browned.

  5. Transfer the cooked vegetables to a serving dish and top with the crumbled bacon.
