Skillet Pear Upside-Down Cake

Instructions

  1. Preheat the oven to 350 F.

  2. Melt 1/4 cup butter and brown sugar in a 10 1/4-inch skillet over medium-low heat, stirring until smooth; set aside.

  3. Peel, core, and thinly slice pears, then arrange them over the brown sugar mixture in the skillet.

  4. Whisk flour, baking powder, cinnamon, and salt in a medium bowl; set aside.

  5. In a mixing bowl, beat 6 tablespoons softened butter and 3/4 cup granulated sugar until light. Blend in egg and vanilla.

  6. Gradually add the flour mixture and milk to the butter mixture, alternating additions until well blended; the batter will be thick.

  7. Spoon the thick batter evenly over the arranged pears in the skillet, spreading gently.

  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

  9. Let the cake stand for 4 minutes after removing it from the oven, then invert onto a heatproof plate.

  10. Serve warm, optionally with ice cream or cream.
