Skillet Corn With Bacon and Sour Cream

An easy skillet corn casserole combines whole kernel corn with sour cream and bacon for a comforting side dish.

Instructions

  1. Fry bacon in a large skillet; drain, crumble, and set aside.

  2. Pour off bacon grease, then melt butter over medium-low heat. Sauté onion and bell pepper for 2 minutes.

  3. Stir in flour and salt, then gradually add sour cream. Heat, stirring constantly, until bubbles appear.

  4. Add corn and heat through, then stir in half of the crumbled bacon.

  5. Transfer the mixture to a serving dish, topping with the remaining bacon and chopped parsley.
