Skate Wing With Brown Butter

Instructions

  1. Preheat the oven to its lowest temperature or warm setting, and have a baking sheet ready.

  2. Lightly salt the skate wings and let them stand for 15 minutes.

  3. Heat a skillet over high heat for 3 minutes, then reduce to medium-high and add 2 tablespoons of butter.

  4. Dredge skate wings in flour, shake off excess, then fry in the butter over medium heat for 2 to 3 minutes per side, carefully flipping.

  5. Transfer the cooked skate wings to the prepared baking sheet and place in the warm oven; if needed, bake at 350 F for 5-10 minutes until cooked through.

  6. Add the remaining 2 tablespoons of butter to the skillet and cook over medium heat until it turns light brown.

  7. Carefully add wine to the skillet, scrape any browned bits from the pan, and cook for 2 to 3 minutes to reduce the alcohol.

  8. Plate the fish, pour the brown butter sauce over, garnish with chives, and serve immediately.
