Instructions

  1. Mash custard apple to a coarse pulp, then cover and partially freeze.

  2. Whisk 2 egg whites in a clean, dry bowl to soft peaks.

  3. In a separate bowl, whisk cream, sugar, and essence, taking care not to over-whisk.

  4. Stir the partially frozen custard apple pulp into the cream mixture.

  5. Gently fold this mixture into the egg whites, then transfer to a freezer bowl and cover.

  6. Freeze for 3 hours or until firm, then whisk until smooth.

  7. Freeze again until firm, then scoop and serve.
