Simplest Roast Squab

Instructions

  1. Preheat oven to 450 F.

  2. Combine 1 stick of butter with shallots, thyme leaves, lemon zest, sea salt, and pepper until smooth; divide into 4 portions.

  3. Loosen the skin on each squab, then spread one butter portion under the skin and between the legs. Stuff each cavity with a thyme sprig and tie the legs together with string. Season all squab with salt and pepper.

  4. Heat the remaining 3 tablespoons butter and olive oil in a heavy skillet over medium-high heat, then brown the squab on all sides.

  5. Transfer squab to a roasting pan and roast for 15-20 minutes, until the breast reaches an internal temperature of 145 F. Rest for 5 minutes before serving.
