Simple Tomato Sauce

Instructions

  1. Heat olive oil in a large saucepan over medium heat, then add onions and carrots, sautéing until translucent.

  2. Stir in tomatoes and garlic, bring to a simmer, and cook uncovered for 30-45 minutes until reduced, breaking up whole tomatoes as desired.

  3. Remove from heat and purée until smooth using a food mill or food processor.

  4. Season to taste with salt and sugar.
