Simple Sweet Tea Jelly

Instructions

  1. Start boiling 2 cups of water.

  2. Steep 1/3 cup loose tea in the boiling water for 4 minutes.

  3. Combine the steeped tea, lemon juice, and pectin in a 2-quart saucepan over medium-high heat, bringing the mixture to a boil.

  4. Stir in the sugar. Bring to a hard boil for 1 minute, then continue stirring for another minute. Insert a thermometer and turn off heat once the jelly reaches 220 F.

  5. To test, spoon a small amount of jelly onto a freezer-chilled plate, return to freezer for 1 minute, then check if it wrinkles when nudged; if not, cook and retest.

  6. Proceed with water bath canning according to recipe directions.
