Instructions

  1. Scrub, peel, and trim the carrots, then slice them into thin coins diagonally.

  2. Place the sliced carrots in a medium saucepan with 1 cup of water, salt, and sugar, and bring to a boil over medium-high heat.

  3. Reduce heat to medium-low, cover, and cook for about 20 minutes, or until the carrots are tender.

  4. Drain the carrots and toss with 2 tablespoons of butter and chopped parsley, if desired.
