Simple Spinach Rice

Instructions

  1. Heat 1 tablespoon canola oil in a medium pot over medium heat.

  2. Sauté 1 cup finely chopped onions until translucent, about 2 minutes.

  3. Add 2 teaspoons fresh thyme, 1 whole hot chile pepper, and 1 teaspoon fine salt; continue sautéing for 2 minutes until fragrant and the pepper softens.

  4. Stir in 4 cups coarsely chopped fresh spinach until it wilts and reduces in volume.

  5. Add 2 cups rinsed long-grain white rice and 2 2/3 cups water; stir to combine.

  6. Increase heat to medium-high, boil for 3 minutes, then reduce heat to low, cover, and simmer for 18 to 20 minutes until the liquid is absorbed.

  7. Adjust seasoning, fluff with a fork, and serve.
