Simple Spinach, Cheese and Onion Quiche Recipe

A quick and easy spinach quiche features a creamy egg custard base with sautéed onions, cheese, and wilted spinach.

Instructions

  1. Preheat the oven to 375F.

  2. In a skillet, melt half the butter over medium heat; cook shallots for 5 minutes until soft, then set aside to cool.

  3. Using the same skillet, melt the remaining butter, add spinach, and cook for 2 minutes until wilted or warmed; set aside to cool.

  4. Whisk cream, milk, eggs, salt, and pepper in a large jug.

  5. Stir the cooled spinach, onions, and all but one tablespoon of cheddar into the egg mixture.

  6. Pour the mixture into your prepared pie crust.

  7. Sprinkle with the reserved cheese and bake for about 25 minutes until the custard is firm.
