Simple Snow Peas With Butter and Lemon

Tender-crisp snow peas are quickly blanched, then sautéed in butter and finished with lemon zest and optional toasted almonds.

Instructions

  1. Start boiling 2 quarts of water with 2 teaspoons of salt in a medium saucepan.

  2. Prepare snow peas by removing stem ends and strings, then rinse thoroughly.

  3. Add snow peas to boiling water, allow to return to a boil, then cook for 30-45 seconds. Immediately drain.

  4. Wipe the saucepan dry, melt butter over medium heat, then add drained snow peas. Sauté for 1 minute.

  5. Stir in lemon zest and optional toasted almonds, cooking for an additional minute.

  6. Season with salt and pepper to taste before serving.
