Place sirloin tips in a slow cooker.

Combine condensed soup, gravy mix, red wine, black pepper, and optional onion and mushrooms in a bowl; mix thoroughly.

Pour this mixture over the sirloin tips.

Cover and cook on low for 7 to 9 hours.

If the liquid lacks flavor, strain it into a saucepan and reduce over medium heat for 5-8 minutes until concentrated.

Return the reduced gravy to the slow cooker, mix with beef, and garnish with parsley.
