Simple Sausage and Cheddar Quiche

Instructions

  1. Preheat oven to 375 F (190 C).

  2. To make the optional crust, combine flour and salt, cut in cold butter until crumbly, then add ice water to form a ball; chill for 30 minutes.

  3. Roll out chilled dough to an 11-12 inch circle and fit into a 9-inch pie plate, then trim and crimp edges.

  4. Line the crust with foil and pie weights, then pre-bake for 8-10 minutes.

  5. Remove crust from oven, discard foil and weights, and let cool.

  6. Brown sausage in a skillet, drain thoroughly, and set aside.

  7. Whisk together eggs, half-and-half, thyme, and pepper.

  8. Distribute cooked sausage over the pre-baked crust, then top with shredded cheese.

  9. Pour egg mixture over the sausage and cheese.

  10. Bake for approximately 30 minutes, or until set and lightly browned.
