Preheat the oven to 425F with a rack in the center.

Make an X-shaped cut on the round side of 1/2 pound unpeeled chestnuts.

Arrange chestnuts on a baking sheet.

Roast for 15 to 20 minutes, or until skins pull back from cuts and nutmeats soften.

Remove from oven, pile into a towel, wrap, squeeze, and let sit for a few minutes.

Peel off the dark shells and any papery skin.
