Simple Matzo Brei

Instructions

  1. Pour hot water over matzos for 1 minute, then drain them.

  2. Break the softened matzo into pieces, then stir them into beaten eggs; let this mixture sit for 5 minutes.

  3. Heat oil or butter in a skillet over low heat.

  4. Add the egg-matzo mixture to the skillet and cook, stirring frequently to allow curdling between stirs, until the egg is set.

  5. Season with salt to taste and transfer to a plate.

  6. Garnish with sliced chives and serve immediately with crème fraîche and applesauce.
