Simple Matzo Brei

Pour hot water over matzos for 1 minute, then drain them.

Break the softened matzo into pieces, then stir them into beaten eggs; let this mixture sit for 5 minutes.

Heat oil or butter in a skillet over low heat.

Add the egg-matzo mixture to the skillet and cook, stirring frequently to allow curdling between stirs, until the egg is set.

Season with salt to taste and transfer to a plate.
