Instructions

  1. Heat 1 inch of oil to 350 F in a large skillet. (Preheat oven to 200 F if holding finished cutlets).

  2. Whisk egg, milk, and hot sauce in a large bowl.

  3. Combine flour, Cajun seasoning, salt, and pepper in a shallow bowl.

  4. Dip chicken cutlets into the egg mixture, then coat fully in the flour mixture.

  5. Carefully place coated chicken into hot oil, adjusting heat to maintain temperature.

  6. Fry chicken for 3 to 5 minutes per side, until golden brown and cooked through.

  7. Drain cooked chicken on paper towels. Return oil to temperature and fry remaining cutlets.

  8. Serve immediately or hold warm in the preheated oven.
