Instructions

  1. Marinade chicken with seasoning for 15 minutes.

  2. Marinade prawns with seasoning for 5 minutes; stir-fry until red, then set aside.

  3. Soak rice noodles in warm water for 10-15 minutes, drain, and marinade for 20-30 minutes.

  4. Soak dried shrimp in warm water for 15 minutes, then finely chop.

  5. Heat a wok with two tablespoons of neutral oil.

  6. Stir-fry garlic, ginger, and chili for 20 seconds. Add chicken and carrot; stir-fry until chicken is white.

  7. Incorporate pepper, all seasonings, and rice noodles; continue stir-frying.

  8. Gradually add stock, stir-frying until noodles absorb all liquid.

  9. Add bok choy and the cooked prawns; stir-fry until bok choy is tender.

  10. Garnish with coriander and a lime wedge.
