Simple Buttermilk Cake

Instructions

  1. Preheat the oven to 400 F.

  2. Combine flour, baking powder, baking soda, salt, and any optional spice in a medium bowl; set aside.

  3. In a large bowl, beat sugar and butter until light and fluffy.

  4. Scrape the bowl, then beat in the egg and vanilla for at least 30 seconds until thoroughly combined.

  5. Alternately add half the buttermilk, stir, then half the flour mixture, stir. Repeat with the remaining buttermilk and flour to form a smooth batter.

  6. Scrape the batter into an 8x8-inch baking pan, smooth the top, and sprinkle with sugar.

  7. Bake for about 25 minutes until golden and a toothpick inserted into the center comes out clean.

  8. Cool on a rack for 10 to 15 minutes until the cake pulls from the pan edges.

  9. Cut and serve warm or at room temperature.
