Simple Beef Curry With Rice

Instructions

  1. Start cooking rice according to package directions.

  2. Cut stew beef into 1/2-inch cubes, season with salt and pepper, then toss with flour.

  3. Heat vegetable oil in a heavy skillet over medium-high heat, then brown the floured beef on all sides.

  4. Add hot water, bring to a boil, then reduce heat, cover, and simmer for 2 hours, adding water if necessary.

  5. Stir in curry powder and pimientos.

  6. Adjust seasonings to taste.

  7. Serve the stewed beef over or mixed with the cooked rice.
