Instructions

  1. Preheat the oven to 400F/200C.

  2. Chill a large mixing bowl in the freezer for 10 minutes or the fridge for 30 minutes.

  3. Sieve flour and baking powder into the chilled bowl.

  4. Rub butter into the flour mixture quickly until it resembles breadcrumbs.

  5. Stir in caster sugar and lavender with a metal spoon.

  6. Reserve 2 tablespoons of egg for glazing, then add remaining egg and 3/4 of the milk to the mixture.

  7. Mix with a dinner knife to form a soft dough, adding more milk if needed to avoid stickiness.

  8. Turn dough onto a lightly floured surface and gently knead until smooth.

  9. Roll dough into a circle at least 2 cm deep.

  10. Dip a 6 cm cutter in flour and cut out scones, avoiding twisting.

  11. Reform dough trimmings and repeat cutting until all dough is used.

  12. Arrange scones on a lightly greased baking sheet, brush tops with the reserved egg.

  13. Bake for 10-12 minutes until golden and risen, checking the base.

  14. Transfer to a cooling rack.
