Simmered Boston Pork Roast Recipe

Instructions

  1. Trim fat from the pork roast.

  2. Heat oil in a Dutch oven over medium heat, sear the roast on all sides, then drain excess fat.

  3. Add soup, water, onion, salt, pepper, cayenne pepper, and bay leaf to the roast.

  4. Cover and simmer over low heat for 1 1/2 hours.

  5. Stir in potatoes, carrots, and Worcestershire sauce; cover and cook for 30 minutes or until tender.

  6. Remove the bay leaf.

  7. Transfer the roast and vegetables to a platter, then tent with foil to keep warm.

  8. Simmer pan drippings to reduce, then serve with the roast.
