Sima (Finnish Spring Mead)

Finnish spring mead, or Sima, is a lightly fermented lemonade perfect for May Day festivities.

Instructions

  1. Start boiling water.

  2. Zest the yellow rind from lemons, discarding the bitter white pith, then slice the peeled lemons.

  3. Place the lemon rind, sliced lemons, brown sugar, and white sugar into a large heatproof container.

  4. Pour the boiling water over the ingredients; cool to lukewarm before stirring in the yeast.

  5. Cover and ferment at room temperature for 24 to 48 hours, or until slight bubbling begins.

  6. Strain the liquid into clean bottles.

  7. Add 5 to 6 raisins and 1 teaspoon sugar to each bottle.

  8. Seal tightly and refrigerate for two to five days until the raisins float.

  9. Serve cool.
