Silky Maple Walnut Fudge

Instructions

  1. Prepare an 8x8 inch pan by lining it with foil and spraying with nonstick spray.

  2. In a heavy-bottomed pan, combine maple syrup, cream, sugar, salt, and corn syrup; stir over medium-high heat until boiling.

  3. Insert a candy thermometer and cook, stirring occasionally, until the mixture reaches 238 F.

  4. Remove from heat and pour the candy into a large mixer bowl.

  5. Place the clean candy thermometer into the hot candy and allow it to cool undisturbed until it reaches 110 F.

  6. Add vanilla and beat with the mixer's paddle attachment on medium-low speed until the fudge thickens and loses its gloss.

  7. Stir in toasted nuts, then scrape the mixture into the prepared pan and spread into an even layer.

  8. Let the fudge set completely at room temperature for one hour.

  9. Remove the fudge from the pan using the foil, then cut it into one-inch squares.
