Shrimp Stir Fry with Chinese Greens Recipe

Instructions

  1. Defrost, rinse, and pat dry shrimp; then marinate with rice wine, 1/2 teaspoon salt, and 1 tablespoon cornstarch.

  2. Chop bok choy into 1-inch pieces; clean and slice fresh mushrooms, or soak, drain, remove stems, and quarter dried mushrooms.

  3. Heat 2 tablespoons oil in a wok; stir-fry ginger for 30 seconds until aromatic.

  4. Add marinated shrimp and stir-fry until pink, then remove from wok.

  5. Add more oil (to 1 1/2 tablespoons total); stir-fry bok choy, mushrooms, and 1/4 teaspoon salt for 1 minute. Add chicken broth, cover, and cook 2 more minutes (adding water or rice wine if vegetables are dry).

  6. Return shrimp to the wok, then add sugar, soy sauce, and pepper.

  7. Stir cornstarch mixture into the center to thicken, cooking for 1 minute.

  8. Serve hot, optionally with rice.
