Shrimp Scampi Stuffed Shells

Instructions

  1. Preheat oven to 375 F and start boiling a large pot of salted water for pasta shells.

  2. Cook pasta shells to al dente, then drain and set aside.

  3. In a large skillet over medium heat, melt oil and butter, then sauté onion, garlic, and red pepper flakes for 3 minutes until onions are translucent.

  4. Add shrimp and cook for 1 to 2 minutes; stir in wine, lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon pepper, then simmer for 1 minute until shrimp is cooked and set aside to cool.

  5. In a large mixing bowl, combine cream cheese, ricotta, Parmesan, parsley, egg, and the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

  6. Fold the cooled shrimp mixture into the cheese mixture.

  7. For the sauce, melt 4 tablespoons of butter in a large skillet over medium heat, sprinkle with flour, and whisk until a golden brown roux forms in 3 to 4 minutes.

  8. Gradually whisk in the half and half, cooking until thickened, then stir in parsley, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper, and set aside.

  9. Spread 1 cup of the sauce on the bottom of a 2-quart baking dish.

  10. Fill each cooked jumbo shell with the shrimp and cheese mixture and arrange them in the baking dish.

  11. Spoon the remaining sauce over the stuffed shells and sprinkle with shredded mozzarella cheese.

  12. Bake uncovered for 25 minutes until bubbly and hot.
