Shrimp Salad Sandwich

Start boiling one quart of salted water in a medium pot.

Add shrimp to the simmering water and cook for 1-2 minutes until pink, then drain, rinse briefly, and pat dry.

Toss cooked shrimp with 1/2 teaspoon Old Bay and 1 teaspoon lemon juice, then refrigerate for 20 minutes to cool completely.

Whisk together the remaining Old Bay, remaining lemon juice, mayonnaise, and Worcestershire sauce in a separate medium bowl.

Combine the cooled shrimp, celery, and scallions with the dressing; toss to coat.
