Shrimp Salad Sandwich

Instructions

  1. Start boiling one quart of salted water in a medium pot.

  2. Add shrimp to the simmering water and cook for 1-2 minutes until pink, then drain, rinse briefly, and pat dry.

  3. Toss cooked shrimp with 1/2 teaspoon Old Bay and 1 teaspoon lemon juice, then refrigerate for 20 minutes to cool completely.

  4. Whisk together the remaining Old Bay, remaining lemon juice, mayonnaise, and Worcestershire sauce in a separate medium bowl.

  5. Combine the cooled shrimp, celery, and scallions with the dressing; toss to coat.

  6. Adjust seasoning with additional lemon juice and salt if necessary.

  7. Serve the shrimp salad on toasted rolls or buns with shredded lettuce.
