Shrimp Quesadilla Recipe

Instructions

  1. In a large skillet over medium heat, heat olive oil. Sauté onion and bell pepper for 6 minutes until tender.

  2. Add shrimp, onion powder, garlic powder, paprika, cumin, and salt; cook for 4 minutes until shrimp are pink. Transfer this mixture to a bowl.

  3. Wipe the skillet, then melt 1 tablespoon of butter over medium heat.

  4. Place one tortilla in the skillet. Sprinkle with half the cheese, then the shrimp mixture, followed by the remaining cheese.

  5. Top with the second tortilla and spread the remaining butter on it. Cook for 3 minutes until the bottom is golden and crisp.

  6. Flip and cook for 3 more minutes until the other side is brown and the cheese is melted; adjust heat to prevent burning.

  7. Transfer to a cutting board, slice into wedges, and serve hot.
