Shrimp Boil Foil Packs

A convenient shrimp boil features individual foil packets cooked on a grill or in an oven for an easy weeknight meal.

Instructions

  1. Preheat oven or grill to 400°F; thaw frozen shrimp under cold water for 10 minutes.

  2. Boil 2 quarts of water, add potatoes and corn, simmer 10 minutes, then drain.

  3. Prepare four aluminum foil sheets (either 12x24 inches folded in half, or 12-inch squares), slightly folding up the edges of each.

  4. In a large bowl, combine the drained potatoes, corn, sausage, shrimp, onion, and garlic. Drizzle with 4 tablespoons melted butter, then season with salt, pepper, and Old Bay; mix thoroughly.

  5. Divide the mixture evenly onto the foil sheets and fold them into well-sealed packets.

  6. Bake packets on a baking sheet for 15 minutes, or grill directly for 15 minutes, flipping once after 8 minutes.

  7. Serve packets garnished with parsley, a pinch of Old Bay, and lemon wedges, with an additional stick of melted butter for dipping.
