Preheat a grill to medium heat (350 F to 375 F).

Combine pineapple chunks, pineapple juice, soy sauce, sesame oil, Sriracha, half of the green onions, and garlic in a resealable bag; add shrimp, mix, and refrigerate for 30 minutes.

Remove shrimp and pineapple from the marinade and thread onto skewers.

Grill kebabs until shrimp are fully pink.

Serve garnished with the remaining green onions.
