Shrimp and Okra With Tomatoes and Rice

Instructions

  1. Start cooking rice according to package directions.

  2. Heat oil and butter in a large skillet; add onion and bell pepper, cooking until softened.

  3. Stir in okra and cook over medium heat until the onion is translucent.

  4. Add tomatoes, wine, lemon juice, parsley, and Cajun seasonings; simmer until tomatoes soften, then season with salt and pepper to taste.

  5. Stir in shrimp and cook 3-4 minutes until pink and opaque.

  6. Serve the mixture over hot rice.
