Shrimp and Crab Gumbo

Instructions

  1. In a large saucepan, cook shrimp in hot roux for a few minutes; set aside.

  2. Heat oil in a large skillet. Sauté okra and onions until tender and transparent.

  3. Add tomatoes and garlic to the skillet; cook briefly. Stir in water, salt, and pepper.

  4. Combine the shrimp-roux mixture with the okra-tomato mixture in a larger pan. Simmer for 10 minutes.

  5. Incorporate oysters, crabmeat, and crab claws; simmer for an additional 15 minutes.

  6. Stir in parsley and green onions; simmer for 15 to 20 more minutes until thickened.

  7. Serve the gumbo over cooked rice, garnished with additional parsley and green onions.
