Shiso and Ume Sauce Recipe

Instructions

  1. Combine soy sauce and mirin in a medium bowl.

  2. Deseed an umeboshi pickled plum; scrape off all flesh and mince it. Add the minced plum to the bowl.

  3. Chiffonade shiso leaves, then cut the strips into smaller pieces to prevent clumping. Add to the bowl.

  4. Mix all ingredients thoroughly. Chill for 30 minutes for best flavor development, or use immediately.

  5. Store in an airtight container in the refrigerator for 3 to 5 days.
