Shio Koji Salmon Recipe

Umami-rich salmon is tenderized through marination in shio koji, a Japanese fermented ingredient.

Instructions

  1. Preheat the oven to broil on high.

  2. Evenly spread shio koji on both sides of salmon filets.

  3. Marinate the salmon in a re-sealable bag or non-reactive container for a minimum of 30 minutes, or up to four hours, or overnight.

  4. Prepare a baking sheet by lining it with foil, topping with a metal broiler rack, and spraying the rack with cooking spray.

  5. Broil the fish for 6 to 8 minutes on one side.

  6. Turn the fish over and broil for an additional 3 minutes until cooked through.
